I just read an account of the final strike on the Tirpitz. There is no
mention of the main guns firing. In fact the Germans seem to have been
taken by surprise with the smoke screen generators off and AA fire not
starting until after the bomb run started. Besides Tirpitz had a maximum
main gun elevation of 30 degrees and was sitting in a fiord.
I can find no evidence of German use of incendiary shrapnel or canister
for large calibre rounds anyway.
